Date Nut Cake

  • 1 cup cut dates
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1/3 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cup sifted cake flour
  • 1/4 teaspoon baking powder
  • 1 cup chopped nuts
  • 1 teaspoon vanilla
DIRECTIONS
  1. In small bowl combine dates, soda, water, and set aside.
  2. In separate bowl, cream margarine, sugar, and eggs.
  3. Sift together flour and baking powder.
  4. Add to creamed mixture.
  5. Alternately with date mixture, stir in chopped nuts and vanilla.
  6. Pour into greased flour tub pan.
  7. Bake at 350F for 45 minutes.
  8. Dust with powdered sugar.
