Date Nut Pinwheels

INGREDIENTS
  • Filling:
  • 3/4 pound pitted dates.
  • 1/3 cup sugar
  • 1/3 cup water
  • 1/2 cup finely chopped nuts
  • 1/2 cup shortening (part margarine)
  • 1 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
DIRECTIONS
  1. Mix shortening, sugar, egg, and vanilla thoroughly.
  2. Stir flour, soda, and salt together.
  3. Stir in.
  4. Form into 2 "roll.
  5. Wrap in wax paper.
  6. Chill until firm.
  7. Divide dough in half.
  8. Roll each piece in wax paper (11x7).
  9. Spread with filling.
  10. Roll tightly beginning at wide side.
  11. Pinch edge to seal.
  12. Wrap each roll in wax paper.
  13. Chill several hours.
  14. Cut into slices.
  15. Bake on greased sheets at 400F for 10 minutes.

  17. Cook & pound pitted dates.
  18. Cut in pieces with 1/3 cup sugar and 1/3 cup water until slowly thickened.
  19. Remove from heat and cool.
  20. Stir in 1/2 cup finely chopped nuts.
