Deep Chocolate Cheesecake Squares

  • Crust:
  • 1-1/2 cups flour
  • 1/2 cup brown sugar
  • 1/2 cup butter or margarine, melted
  • Cheesecake:
  • 2 cups chocolate chips
  • 16 ounces cream cheese, softened
  • 2/3 cup sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1/2 cup evaporated milk
  • Powdered sugar
  1. For crust, combine flour, brown sugar and butter in medium bowl; press onto bottom of greased 13x9 baking pan. Bake at 350F for 10-12 minutes or until golden brown around the edges.
  2. For cheesecake topping microwave chocolate chips in medium, microwave-safe bowl on high (100%) powder for 1 minute; stir. Microwave at additional 10 to 20 second intervals, stirring until smooth; cool. Beat cream cheese, sugar and vanilla in small mixer bowl until smooth. Beat in eggs.
  3. Gradually beat in evaporated milk and melted chocolate. Pour over crust. Bake at 350F for 25-35 minutes or until center is set. Cool to room temperature; chill until firm. Sprinkle with powdered sugar; cut into squares.
