Delicata Squash Fries (Oven-Baked)
INGREDIENTS

  • Approx. 2 delicata squashes
  • 2-3 Tbsp olive oil
  • Salt, to taste
DIRECTIONS
  1. Wash the squash and cut it in half lengthways.
  2. Remove all the seeds and filaments and cut the squash, without peeling it, in the shape of fries.
  3. Place the fries on a single layer in a glass dish (ex: 9x13 pyrex) OR on a baking sheet lined with parchment paper. Add oil and salt, to taste (and you can add any other herb or spice you want). Mix everything well.
  4. Bake on the center rack of the oven preheated to 180 ° C (350 ° F) for 20 to 30 minutes, until the fries are tender (you can also heat at 450F but cooking will be faster and must be checked frequently after 15 min).
  5. Bring the oven to broil and cook on the top rack for a few minutes (2-5 min), just enough to get the fries grilled a bit more, but remove before they start to turn too dark in colour.

FEATURING: Delicata squash. A nice, simple, healthier and delicious recipe! You can add 1 tsp. fresh rosemary, finely chopped (optional).
