Deluxe Spinach-Artichoke Bake
INGREDIENTS
  • 1 can artichoke hearts, drained
  • 2 oz. butter
  • 8 oz. fresh mushrooms
  • 1 large clove garlic
  • 1 tablespoon flour
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. lemon pepper
  • 1/4 tsp. nutmeg
  • 2 10 ounce packages chopped spinach, thawed and
  • well drained to sauce
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/8 cup lemon juice
DIRECTIONS
  1. DELUXE SPINACH-ARTICHOKE BAKE
  2. 1 can artichoke hearts,
  3. drained
  4. Spray dish, 8 x 8-inch Pyrex, with Pam. Slice artichoke
  5. hearts and layer in dish. Set aside.
  6. 2 oz. butter, melted
  7. 8 oz. fresh mushrooms, sliced
  8. 1 large clove garlic, minced
  9. Saute until all moisture is gone. Add 1 tablespoon
  10. flour; saute 1 minute. Add 1/2 cup milk slowly and stir until
  11. thickened. Remove from heat add:
  12. 1/2 tsp. salt
  13. 1/4 tsp. lemon pepper
  14. 1/4 tsp. nutmeg
  15. Add two 10 ounce packages chopped spinach, thawed and
  16. well drained to sauce; stir well. Pour mixture over artichoke
  17. hearts. In small dish, mix 1/2 cup mayonnaise, 1/2 cup sour
  18. cream and 1/8 cup lemon juice. Pour evenly over spinach
  19. mixture. Bake in preheated 375 degrees oven 15 to 20 minutes or until
  20. topping is bubbly.
