Deluxe Spinach-Artichoke Bake

- 1 can artichoke hearts, drained
- 2 oz. butter
- 8 oz. fresh mushrooms
- 1 large clove garlic
- 1 tablespoon flour
- 1/2 cup milk
- 1/2 tsp. salt
- 1/4 tsp. lemon pepper
- 1/4 tsp. nutmeg
- 2 10 ounce packages chopped spinach, thawed and
- well drained to sauce
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/8 cup lemon juice
DIRECTIONS
- DELUXE SPINACH-ARTICHOKE BAKE
- 1 can artichoke hearts,
- drained
- Spray dish, 8 x 8-inch Pyrex, with Pam. Slice artichoke
- hearts and layer in dish. Set aside.
- 2 oz. butter, melted
- 8 oz. fresh mushrooms, sliced
- 1 large clove garlic, minced
- Saute until all moisture is gone. Add 1 tablespoon
- flour; saute 1 minute. Add 1/2 cup milk slowly and stir until
- thickened. Remove from heat add:
- 1/2 tsp. salt
- 1/4 tsp. lemon pepper
- 1/4 tsp. nutmeg
- Add two 10 ounce packages chopped spinach, thawed and
- well drained to sauce; stir well. Pour mixture over artichoke
- hearts. In small dish, mix 1/2 cup mayonnaise, 1/2 cup sour
- cream and 1/8 cup lemon juice. Pour evenly over spinach
- mixture. Bake in preheated 375 degrees oven 15 to 20 minutes or until
- topping is bubbly.
