Deviled Potato Salad
  • 5 Potatoes, Peeled & Diced
  • Salt
  • 1/4 Onion
  • 3 Tbsp Yellow Mustard
  • 1/2 cup Mayonnaise
  • 1 tsp Paprika
  • 1 tsp Frank's Red Hot Sauce
  • Salt
  • Black Pepper
  • 2 Scallions, Thinly Sliced
  1. *Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes
  2. *Drain cooked potatoes and return to the warm pot to dry them out, let the potatoes stand 2 minutes, then spread potatoes out onto a cookie sheet to quick-cool them
  3. *In the bottom of a medium mixing bowl, grate 1/4 onion using hand grater
  4. *Add mustard & mayonnaise, paprika & cayenne pepper sauce to the grated onion and stir to combine
  5. *Add potatoes to the bowl and stir to evenly distribute dressing
  6. *Season potato salad with salt and pepper and taste to adjust your seasonings
  7. *Top servings of salad with chopped scallions
