Dilled Zucchini
  • 2 medium zucchini, halved lengthwise
  • 2 tablespoons butter, melted
  • fresh dill
  1. Cut zucchini in half lengthwise. Cook, covered, in 1 inch boiling salted water for 12 minutes or until tender. Drain, brush zucchini with melted butter and sprinkle with fresh dill. (Make sure you don't try to substitute dried dill - not a chance!)
This is my favorite way to eat zucchini. It's simple, and the dill-butter sauce tastes wonderful. I have a hard time cooking zucchini any other way now!
