Double Good Blueberry Pie

- Pre-baked pie shell
- 4 cups fresh blueberries
- 1 tablespoon butter
- 3/4-1 cups sugar
- 1 tablespoon lemon juice
- 3 tablespoons cornstarch
- 1/8 tsp. salt
- 1/4 cup water
- Cool Whip
DIRECTIONS
- Bake pie shell and let cool.
- Place 2 cups fresh (uncooked) berries in bottom of pie shell.
- In saucepan,add sugar,cornstarch and salt and mix together.
- Add water and the other 2 cups of berries.
- Cook over medium heat -stir constantly until
- mixture comes to boil and is thick and clear.(Will be quite thick)
- Remove from heat and stir in butter and lemon juice.
- Cool slightly.
- Pour cooked mixture over uncooked blueberries in shell & refrigerate.
- Top with Cool Whip.
