Dungeness crab salad

  • 2 cups fresh dungeness crab meat (do it yourself, it makes all the difference)
  • 3/4 c best foods mayo
  • 1 T dijon mustard
  • 1/2 c finely diced celery
  • 1/4 c caramelized onion
  • 1 T roasted garlic
  • 1/4 t kosher salt
  • 5 dashes garlic tabasco sauce
  • 1 T balsamic vinegar
  • Optional -serve with crackers, romaine lettuce, or stuffed in english cucumbers
  1. Mix all ingredients but crab together well
  2. Fold in crab so that all the hard work you made in cleaning it doesn't go to waste - you want to see those big chunks in there!
  3. Put in bowl and got to town - if you can't wait, just scoop and eat with crackers, or you can stuff in a english cucumber that has the seeds scraped out of it.
This is great served on crackers, over a salad, or stuffed in an english cucumber.
