Early Morning Burrito

  • 1 pound bulk sausage
  • 12 Large Eggs
  • 12 Tablespoons salsa
  • 12-10 inches flour tortillas
  • 2 Jalapeño chilis
DIRECTIONS
  1. In a heated, nonstick coated skillet, break up sausage and fry until browned. Break all eggs into a bowl and add 1/4 cup water and whisk well. In another similarly prepared skillet, pour in eggs and scramble with a fork by continuously running the fork through the egg mixture until eggs are set. Remove from heat. Lay out tortilla's and place 1/12 of the scrambled eggs on each tortilla. Evenly divide the cooked sausage between the tortillas and top with 1 tablespoon of salsa and diced jalapeño chili. Fold one end of tortilla1/3 of the way over the mixture and roll up. Repeat.
