Easy Chicken Picatta

  • 1 1/2 lbs boneless skinless chicken thighs, flattened to 1/2 inch thick
  • 1 T lemon pepper seasoning
  • 1 T olive oil
  • 4 T butter
  • 3 T capers
  • 1/2 cup lime juice
  • 1/2 cup chicken stock
  • 1 t salt (or more to taste)
  • 1/2 t ground black pepper
  • 1/4 cup parsley, chopped
  1. Sprinkle chicken with lemon pepper seasoning.
  2. Cook chicken in olive oil till brown, about 4 minutes each side.
  3. Remove chicken from pan.
  4. Melt butter in pan with olive oil and chicken drippings.
  5. Ad capers and quickly saute for 1 minute over medium heat.
  6. Add lime juice, chicken stock, salt, pepper and let reduce, about 5 minutes.
  7. Add chicken back to pan and cook another 5 minutes or till ready to serve.
  8. Garnish with parsley.
  9. Serve with rice and brocolli
