Easy Chicken Picatta
INGREDIENTS

- 1 1/2 lbs boneless skinless chicken thighs, flattened to 1/2 inch thick
- 1 T lemon pepper seasoning
- 1 T olive oil
- 4 T butter
- 3 T capers
- 1/2 cup lime juice
- 1/2 cup chicken stock
- 1 t salt (or more to taste)
- 1/2 t ground black pepper
- 1/4 cup parsley, chopped
DIRECTIONS
- Sprinkle chicken with lemon pepper seasoning.
- Cook chicken in olive oil till brown, about 4 minutes each side.
- Remove chicken from pan.
- Melt butter in pan with olive oil and chicken drippings.
- Ad capers and quickly saute for 1 minute over medium heat.
- Add lime juice, chicken stock, salt, pepper and let reduce, about 5 minutes.
- Add chicken back to pan and cook another 5 minutes or till ready to serve.
- Garnish with parsley.
- Serve with rice and brocolli
