Easy Chili Relleno Casserole

  • 2 Cans Of 7 Oz. Whole Green Chilies
  • 1 Lb. Cheddar Cheese Cut Into Strips
  • 4 Tbsps. Flour
  • 4 Tbsps. Half and Half
  • 1 Tbsps. White Vinegar
  • 4 Eggs, Beaten Lightly
  • Salt & Pepper To Taste
  • 1/2 Cup Grated Cheddar/Monterey Jack Cheese, Grated
  1. Preheat oven to 400 degrees
  2. Slit open chiles and remove seeds and stems. Stuff each chili with a piece of cheese. Arrange chili's in a buttered casserole dish in either 1 or 2 layers
  3. In a mixing bowl, combine flour, half and half, vinegar, and eggs. Beat slightly with a whisk or fork until mixed (batter will appear slightly lumpy). Season with salt and pepper and pour over chilis
  4. Bake for 30-40 minutes. 5 minutes before serving sprinkle with 1/2 cup of grated cheese and the pepitas
