Easy Italian Beef

  • 1 Roast Beef-----3-5 lb average.
  • 2 jars Mt. Olive Pepperoccinis
  1. In a crock pot, put the roast in the bottom. Open the jars of peppers, and pour the juice and all over. Cover and turn on to high for 1 hour. Turn down to low and cook 6-8 more hours, or until done. Should be tender enough to pull apart with a fork.
My husband was craving Italian Beef one day right after we married. I didn't have many spices in the pantry, but I did have 2 jars of pepperoccinis in the cabinet. I used those and the roast and found it to be the best tasting and easiest to make. My 9 year old makes this quite often on her own!
