Easy cheesy Chicken florentine
  • 2 packages 12oz each Stouffers frozen Spinach Souffle defrosted
  • 6 boneless skinless chicken breast halves seasoned with salt and pepper
  • 2 T veg oil
  • 2 cups cooked white rice
  • 1 cup milk
  • 1 cup (4oz) shredded swiss cheese divided
  • 1/4 cup chopped onion
  • 2 t Dijon mustard
  • 1/2 t salt
  • 1 cup coarse freash breadcrumbs
  • 2 T butter or margarine, melted
  1. Preheat oven 375 SAUTE chicken in oil until golden brown. COMBINE souffle,rice milk, 1/2 cup cheese,onion,mustard and salt stir and place in 9x13 pan Place chicken on top COMBINE breadcrumbs,butter and cheese put on casserole cover with foil bake 25 min remove foil bake for 35-40 minutes until spinach is set and chicken is cooked. Wonderful company or family meal
