Eat your veggies Brownies
INGREDIENTS
  • Servings: 2 dozen
  • 2 c. flour
  • 1/3 c cocoa
  • 1 1/2 tsp soda
  • 1 tsp salt
  • 2 c. shredded zucchini
  • 1 1/2 c sugar
  • 3/4 c oil
  • 1/2 c chopped walnuts
  • 2 tsp vanilla
DIRECTIONS
  1. In a large bowl, combine the flour, cocoa, baking soda and salt.
  2. In a small bowl, combine the zucchini, sugar and oil; stir into dry ingredients until blended. Stir in walnuts and vanilla.
  3. Pour into a greased 13-in. x 9-in. x 2-in. baking pan.
  4. Bake at 350° for 35-40 minutes or until a toothpick comes out clean.
  5. Cool on a wire rack for 30 minutes.
  6. In a large saucepan, melt butter; stir in sugar and milk.
  7. Bring to a boil over medium heat, stirring frequently.
  8. Cook and stir 1 minute or until smooth. Remove from the heat.
  9. Stir in chips and marshmallows until melted and smooth; add vanilla.
  10. Spread over brownies.
  11. Sprinkle with walnuts if desired.
  12. Yield: 2 dozen.
RECIPE BACKSTORY
When I first tasted these, I could not believe that they had a veggie in them! With zucchini in abundance this time of year..one more way to use it up!
