Edamame Dip/Spread
INGREDIENTS
  • 2 cups cooked edamame
  • 1/2 cup water
  • 1/2 cup chopped red onion
  • 3 tbsp chopped fresh cilantro
  • 2 tbsp rice vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • 4 tsp chili garlic sauce (such as Lee Kum Kee)
  • 1 (16-ounce) can cannellini/white beans, drained
DIRECTIONS
  1. Place all ingredients in a food processor, and process until smooth.
  2. Serve immediately, or cover and chill.
