Egg and Veggies Omelet

- 2 eggs
- 8 mushrooms, chopped
- 8 spinach leaves
- 1 clove garlic, diced
- 1 tbsp onion, diced
- 1 tbsp olive oil
- Black pepper
- Salt
DIRECTIONS
- Beat the two eggs in a bowl using an egg beater.
- Add spinach, mushrooms, salt, and pepper to taste.
- Mix well to incorporate all the ingredients.
- Heat up the olive oil in a pan to saute the garlic and onion.
- Add the eggs to the pan. Flip or fold the omelet. Cook until done.
