Eggnog-Cherry Nut Loaf

INGREDIENTS
- Cooking Time: 45 to 50
- 2-1/2 cups all-purpose flour
- 3/4 cup sugar
- 1 T baking powder
- 1 beaten egg
- 1-1/4 cup dairy eggnog (or homemade)
- 1/3 cup cooking oil
- 1/2 cup chopped walnuts or pecans
- 1/2 cup chopped maraschino cherries
- Homemade eggnog:
- 2 eggs
- 1-cup light cream
- 1/4-cup sugar
- 1/4 teaspoon ground nutmeg
DIRECTIONS
- In mixing bowl, stir together flour, sugar, baking powder and 1 teaspoon salt.
- Mix eggs, eggnog, nuts and cherries.
- Turn into two 8x4x2 inch loaf pans.
- Bake at 350ยบ for 45-50 minutes or till done.
- Cool in pans 10 minutes.
- Remove from pans, cool on wire rack
