Eggnog-Cherry Nut Loaf
INGREDIENTS
  • Cooking Time: 45 to 50
  • 2-1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 T baking powder
  • 1 beaten egg
  • 1-1/4 cup dairy eggnog (or homemade)
  • 1/3 cup cooking oil
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup chopped maraschino cherries
  • Homemade eggnog:
  • 2 eggs
  • 1-cup light cream
  • 1/4-cup sugar
  • 1/4 teaspoon ground nutmeg
DIRECTIONS
  1. In mixing bowl, stir together flour, sugar, baking powder and 1 teaspoon salt.
  2. Mix eggs, eggnog, nuts and cherries.
  3. Turn into two 8x4x2 inch loaf pans.
  4. Bake at 350ยบ for 45-50 minutes or till done.
  5. Cool in pans 10 minutes.
  6. Remove from pans, cool on wire rack
RECIPE BACKSTORY
I made this yesterday. It was wonderful. the house smelled so good and DH couldn't wait for it to cool and have with coffee. It also would make a nice presentation in a goodie basket.
