Eggplant “Pizzas”
INGREDIENTS
  • Cooking Time: 20 minutes
  • Eggplant
  • Salt
  • Olive oil
  • Oregano
  • Tomato sauce
  • Cheese
DIRECTIONS
  1. Cut eggplant in 3/4” slices.
  2. Salt both sides.
  3. Let sit about 20 minutes.
  4. Rinse pieces and drain.
  5. Put on oiled baking dish.
  6. Put a little oil and oregano on top.
  7. Cover with foil or wok top.
  8. Bake in 350 to 375 degree oven for about 20 minutes until just tender.
  9. Cover with a tomato sauce.
  10. Sprinkle with cheese (your choice).
  11. Broil a few minutes just before serving.

The female eggplant has more, smaller seeds; the male eggplant bas larger, fewer seeds, and a more bitter taste. Male eggplants tend to have less of an indentation on the vine stem end than the females. Kosher (dairy).
