Eggplant and Halibut With White Miso Marinade
INGREDIENTS

  • 1/4 cup white miso
  • 2 t lime juice
  • 1 T sugar
  • 2 T sake
  • 1 t soy sauce
  • 1 Japanese eggplant, sliced
  • 1 pound halibut
  • chopped green onion
  • thinly sliced cucumber
  • cooked rice
DIRECTIONS
  1. Whisk together miso, lime juice, sugar, sake and soy sauce; rub 1/3 sauce on sliced eggplant and the remainder on halibut. Cover; chill 30 minutes to 8 hours.
  2. Broil until eggplant is browned and soft and fish is browned and just cooked through. Serve over rice, sprinkled with green onion and cucumber.
