Eggs Ranchero Style
  • 1 small onion chopped
  • dash of olive oil
  • 6 roma tomatoes puree
  • 1 red bell pepper diced finely
  • dash of olive oil
  • optional - 1 jalapeƱo pepper chopped finely for spicy sauce and sliced for garnish
  • 8 eggs
  • cilantro to garnish
  1. First make sauce.
  2. In pan saute onions with oil then add more oil if needed and add tomatoes, bell pepper and jalapeno (optional for spicy).
  3. Cook around 10 minutes or until sauce is done.
  4. Place sauce aside and cook eggs as you like them.
  5. Place eggs on plate and add sauce.
  6. Add a little cilantro for garnish.
  7. You may also garnish with jalapeno pepper sliced finely (optional).
