Eggscellent Muffins
INGREDIENTS

  • 1 lb. Ground turkey
  • 1 Small yellow onion, diced
  • 1/2 C. Mixed veggies, diced
  • 3 C. Egg whites (1/4 C. Each)
  • 2 tsp. Garlic or regular salt
  • 2 tsp. Pepper
DIRECTIONS
  1. reheat oven to 375 degrees.
  2. In a large pan, cook ground turkey and the onion thoroughly, season with salt and pepper.
  3. Spray a muffin tin with zero-calorie, non-stick cooking spray.
  4. Distribute veggies evenly among the muffin tin.
  5. When the turkey and onions are cooked, distribute these evenly among the muffin tin.
  6. Measure out a 1/4 C. of egg whites and pour over each muffin.
  7. Bake for 30 minutes or until cooked through.
