Eggscellent Muffins

- 1 lb. Ground turkey
- 1 Small yellow onion, diced
- 1/2 C. Mixed veggies, diced
- 3 C. Egg whites (1/4 C. Each)
- 2 tsp. Garlic or regular salt
- 2 tsp. Pepper
DIRECTIONS
- reheat oven to 375 degrees.
- In a large pan, cook ground turkey and the onion thoroughly, season with salt and pepper.
- Spray a muffin tin with zero-calorie, non-stick cooking spray.
- Distribute veggies evenly among the muffin tin.
- When the turkey and onions are cooked, distribute these evenly among the muffin tin.
- Measure out a 1/4 C. of egg whites and pour over each muffin.
- Bake for 30 minutes or until cooked through.
