Ellen’s Cottage Cheese Pancakes
INGREDIENTS
  • 2 C cottage cheese
  • 2 eggs
  • a little oil
  • 1/2 C flour (or more)
  • 1 T sugar
  • Cinnamon (optional)
DIRECTIONS
  1. Sieve cheese.
  2. Mix all ingredients together.
  3. Fry on teflon or lightly greased pan.
  4. Make very small pancakes, about 2” in diameter.
