Elsie's Potatoes

  • 6 potatoes, (I usually go with one per person)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp onion salt
  • pepper to taste
  • 2-4 Tbsp butter, melted
  1. Peel and boil potatoes until soft. Drain.
  2. Mix all ingredients except butter.
  3. Place potato mixture into casserole dish and put butter over top.
  4. Bake covered, at 350 degrees F for 30 minutes. Can be made ahead in morning and cooked in slow cooker. Freezes well, if doing so thaw before baking.
My sister-in-law gave me this recipe a few years ago and it was an instant hit! Very simple to make and oh so tasty! It goes well with any meat dish that doesn't create juice for a gravy.
