Emma's Tamale Pie
INGREDIENTS

- 1 yellow onion, chopped and caramelized
- 3/4 lb ground beef
- 2 8oz cans seasoned tomato sauce
- 1 can corn, drained
- 1/2 c chopped olives
- 2 T roasted garlic
- 1 T sugar
- 1 t salt
- 2 1/2 t chili powder
- dash pepper
- 1 1/2 c shredded mexican blend cheese
- Corn meal top
- 3/4 c yellow cornmeal
- 1/2 t salt
- 2 c cold spring water
- 1 T butter
DIRECTIONS
- Brown ground beef and drain fat, add everything but cheese and mix well
- Simmer for 20 to 25 minutes or until thickened
- Remove from heat and add cheese, stir until melted
- Pour mixture into 9x12 baking dish
- Corn Meal Top
- Stir cornmeal and salt into cold water, heat and stir until thick
- Add butter and mix well
- Spoon over meat mixture, making narrow stripes
- Bake at 375 degrees for 40 minutes or until top is browned
