Emma's Vegetable Soup

INGREDIENTS
  • 1 Tbsp Oil
  • 1 Onion, Diced
  • 1 Carrot, Halved Lengthwise & Sliced
  • 2 Celery, Sliced
  • 3 Garlic, Minced
  • 4 cup Water
  • 2 Oriental Top Ramen Seasoning
  • 1 1/2 Roma Tomatoes, Chopped
  • 1 tsp Dried Basil
  • 1/4 tsp Oregano
  • Salt & Pepper To Taste
  • 15 oz Lentils, Cooked
  • 1 cup Bowtie Pasta
  • Parmesan
DIRECTIONS
  1. *Heat the oil in a heavy saucepan over medium heat; add onion, carrot, and celery and sauté until tender (about 5 minutes)
  2. *Add garlic, water, top ramen seasoning, tomatoes, basil, oregano, salt, pepper, and beans
  3. *Bring to a boil, reduce heat and simmer 10 minutes
  4. *Add pasta and cook 10-15 minutes stirring occasionally until the pasta is tender
  5. *Serve sprinkled with parmesan cheese
RECIPE BACKSTORY
Thanksgiving 2010, Emma at 5 years old. She wants to take some vegetable soup to the Thanksgiving party. She wants vegetable soup with bow tie noodles. We find a recipe and Emma made soup for Thanksgiving. It was sooo delicious! Submitted by Emma
