Enchilada Stuffed Sweet Postatoes
INGREDIENTS
  • Cooking Time: 40 minutes
  • Servings: 6
  • Preparation Time: 20 minutes
  • For meat stuffing mix:
  • 1 cup diced sweet onion
  • 1 medium diced poblano pepper, seeds removed
  • 4 cloves of minced garlic
  • 1 teaspoon salt
  • 1 lb ground beef
  • 3 tablespoons of oil
  • 6 sweet potatoes
  • Toppings:
  • sour cream
  • Avocado diced
  • cilantro
  • black olives
  • Cotija cheese
  • black beans (canned)
  • brown rice (cooked)
DIRECTIONS
  1. Preheat over 400 degrees
  2. Spray potatoes with olive oil
  3. Prick potatoes with a fork
  4. Bake until tender, about 45 minutes
  5. Add oil to pan,
  6. sauté the onions, poblano pepper, garlic about 5 minutes
  7. add beef and cook until no longer pink and pepper are soft
  8. add salt and stir
  9. Cut open potatoes add meat stuffing mix and top with toppings
