Escalloped Tomatoes
  • 1 No. 2 Can diced tomato
  • 2 cups grated bread crumbs -- fresh bread
  • 1 teaspoon salt
  • 2 Tablespoons butter
  • dash pepper
  1. Reserve 3 Tablespoons of bread crumbs and spread remainder on a pan. Brown in the oven.
  2. Mix tomato, browned crumbs, salt, pepper and 1/2 the butter together and put in a shallow baking dish.
  3. Spread the unbrowned crumbs on top and dot with remainder of the butter cut into bits.
  4. Bake at 350° for 30 minutes.
  5. The top of the dish should be brown and crisp.
