Everyday Meatloaf
  • 2 beaten eggs
  • ¾ cup milk
  • ½ cup dry bread crumbs ( I replace a little of the bread crumbs with ground flax to give it a little bit of healthy)
  • ¼ cup finely chopped onion
  • 2 Tbsp snipped parsley
  • 1 Tsp Salt
  • ½ Tsp ground sage
  • 1/8 Tsp ground pepper
  • 1 ½ pounds of ground beef (he sometimes split this b/t beef/pork, I’ve also split it with ground chicken)
  • ¼ cup Ketchup
  • 2 Tbsp brown sugar
  • 1 Tsp dry mustard
  1. Combine the eggs and milk, stir in the bread crumbs, onion, parsley, sage, salt and pepper. Add the ground beef. Thoroughly mix together, but mix lightly. Too much handling will cause a dense/compacted meatloaf. Shape in to a loaf and place in an ungreased 8x4x2 load pan. Slightly press meat down around the edges, pulling it away from the sides of the pan a little bit. Bake in the oven at 350 degrees for 1 ¼ hours.
  2. When the meatloaf is complete, stir together the ketchup, brown sugar and dried mustard to make a drizzle or glaze to top it with.
