FETTUCCINE AND BROCCOLI

INGREDIENTS
  • 1 large bunch broccoli
  • 1/8 cup olive oil
  • 1 1/2 tablespoons minced garlic
  • 1/2 cup chicken broth
  • 2 tablespoons light margarine
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 12 ounces fettuccine
  • 1/3 cup grated Parmesan cheese
DIRECTIONS
  1. Cut stems off broccoli. Steam flowerets in 1/2 cup boiling water, covered, in microwave or on top of stove for 5 minutes, until crisp tender. Drain when cool, cut into 1/2-inch pieces. In saucepan, heat oil and saute garlic until golden. Add chicken broth and margarine. Stir in basil, oregano, salt and pepper. Add broccoli. Cook fettuccine according to directions on package omitting oil and salt; drain. Stir broccoli with sauce into cooked pasta. Add Parmesan cheese, tossing to mix well.
