• CAKE:
  • 2 1/2 c. all purpose flour
  • 1 2/3 c. sugar
  • 1 c. butter, softened
  • 1 c. buttermilk
  • 4 lg. eggs, at room temperature
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. vanilla extract
  • zest of 1 orange
  • GLAZE:
  • 6 oranges
  • 2 c. sugar
  • 1 stick butter
  • 2 tsp. vanilla extract
  • zest of 2 oranges
  1. Preheat oven to 350°F. Combine all cake ingredients in large mixer bowl. Beat at low speed, just until moistened (1 to 2 minutes). Increase speed to high. Beat, scraping bowl often, until well mixed (2 to 3 minutes). Add 1/3 of the orange zest to the batter then pour into a greased 13"x9" baking pan. Bake for 40 to 50 minutes or until toothpick inserted in center comes out clean. For the glaze; zest 3 oranges and set aside; peel and grate the 6 oranges or run them through a food processor. Place pulverized oranges in a sauce pan with the other glaze ingredients. Bring to a boil and keep at a low boil until sauce reduces by half. This will take about an hour and you will need to stir frequently. Once cake has cooled, poke holes in the cake and pour hot glaze over cake slowly to allow all the juices to soak into the cake.
Mom always made this cake at Christmas but I make it any time I get the urge. There's nothing about this cake that restricks it to just the holiday. This will become one of your families favorites...
