• 3 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 cup vegetable oil
  • 3 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 2 teaspoons cinnamon
  • 1 cup chopped pecans
  • 3 cups juicy apples, chopped
  1. Peel, core and chop apples. Stir in soda and set aside.
  2. Sift together flour, salt and cinnamon.
  3. Cream together eggs and sugar.
  4. Add oil and vanilla. Beat well.
  5. Stir in flour mixture, batter will be very thick.
  6. Fold in apples and chopped pecans.
  7. Pour into a greased and floured tube pan.
  8. Bake at 350% for one hour.
  9. Remove from oven and allow to stand 5 minutes.
  10. Turn onto a cooling rack and let stand until cool.
  11. (NOTE: this cake has no liquid. If you find that you have chopped too many apples go ahead and add them but also add another beaten egg)
