FRESH APPLE CAKE

INGREDIENTS
- 3 eggs
- 2 cups sugar
- 2 teaspoons vanilla
- 1 cup vegetable oil
- 3 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon soda
- 2 teaspoons cinnamon
- 1 cup chopped pecans
- 3 cups juicy apples, chopped
DIRECTIONS
- Peel, core and chop apples. Stir in soda and set aside.
- Sift together flour, salt and cinnamon.
- Cream together eggs and sugar.
- Add oil and vanilla. Beat well.
- Stir in flour mixture, batter will be very thick.
- Fold in apples and chopped pecans.
- Pour into a greased and floured tube pan.
- Bake at 350% for one hour.
- Remove from oven and allow to stand 5 minutes.
- Turn onto a cooling rack and let stand until cool.
- (NOTE: this cake has no liquid. If you find that you have chopped too many apples go ahead and add them but also add another beaten egg)
