Fajita Chicken Pasta Salad
  • 1 uncooked package of seasoned fajita chicken strips
  • 1 green bell pepper diced
  • 1 cup marinated artichoke hearts, cut into small pieces
  • 1 cup marinated mushroom buds, cut into small pieces.
  • 1 small can of diced black olives
  • 2 tablespoons crushed red pepper
  • 4 large tablespoons of minced garlic
  • 1 1/2 cups olive oil
  • 1/8 cup red wine vinegar
  • Oregano to taste
  • 1 lb salad pasta your choice
  1. In a large bowl, combine all ingredients except pasta and chicken, mix well.
  2. Grill or fry chicken well done and dice.
  3. Follow directions on package to cook pasta.
  4. Add cooked diced chicken to bowl, mix well ensuring olive oil and vinegar cover meat.
  5. Add cooked drained pasta to bowl and mix well ensuring olive oil and vinegar cover the pasta.
  6. If mixture seems dry add more of both liquids.
