Falafel Salad with Creamy Garlic Dressing

- 1 cup cherry tomatoes
- 3 pickled cherry peppers
- 1/2 of a cucumber
- 1 small head of lettuce
- 5 tbl. olive oil
- 2 garlic cloves
- 1 small onion
- 3/4 tsp. cumin
- 1/2 tsp. corriander
- 1/4 tsp. cayenne pepper
- One can chickpeas
- 1 large egg
- 2 tbl. tahini
- 1/2 tsp. salt
- 3/4 cup panko bread crumbs
DIRECTIONS
- Carmelize onions add garlic, cumin, corriander, cayenne pepper, cook one minute.
- Rinse and drain chickpeas coarsely chop then add to onion mixture.
- Add egg, tahini, garlic and salt to blender, add to chickpea mixture. Make patties and roll in breadcrumbs.
- Cover and chill patties for 10 minutes. Fry in olive oil until golden.
- Creamy Garlic Dressing
- 2 tbl. sherry vinegar
- 2 tsp. dijon mustard
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 garlic clove
- 1/4 cup plain yogurt
- 1/4 cup olive oil
- Mix together and blend.
- Put falafel, cherry tomatoes, cherry peppers, and cucumbers over lettuce. Pout dressing over salad.
