Fast Shrimp Tacos
  • Servings: 3- 4
  • -1 lb. little pre-cooked shrimp marinated 15 minutes in juice from one lime and chopped jalapeno to taste
  • -sliced red pepper
  • -1 avocado mashed with two cloves chopped garlic
  • -chopped green onion
  • -chopped cilantro-mix in with shrimp right before serving
  1. I made my own 7 inch tortillas to make the tacos out of, but you could obviously use store bought to make it even more simple.(see my cookbook for a recipe)
  2. I just let everyone put their own together so they can make the porportions to their liking. Serve with lime slices and sangria.
I don't really consider this a recipe since there's not a whole lot to it, but that doesn't mean it's not delicious. After being at work all day, making these tacos is just engaging enough to be satisfying but not so complicated that you starve before they are ready.
