Favorite Garlicky White Bean Dip
INGREDIENTS
- 15 oz can cannellini beans (white kidney beans)
- 2 Tbsp lemon juice
- 1/2 cup olive oil
- 1 garlic clove (or a Tbsp chopped)
- Fresh Basil Leaves (optional)
- salt and pepper
DIRECTIONS
- Throw everything in the food processor until it's smooth.
- When I have a bumper crop of basil I look for lots of ways to use it up.
- Throw a few big leaves into the food processor with everything else, it adds a nice herbaceous note.
- Add salt and pepper to taste.
- If you want it thicker, cut back the oil, it you like it smooth add more oil.
- This is awesome with good pita bread, especially with Baked Herbed Pita Wedges (see my recipes). Also makes a great dip for a veggie crudite.
