Favorite Spinach Soup
  • Servings: 4
  • 2 cups cooked pasta of your choice
  • 4 cups chicken or vegetable broth
  • 1 14oz can diced tomatoes (can use roasted)
  • Pinch Italian seasoning
  • 1 15oz can kidney or northern beans
  • 4 oz spinach
  • Parmesan
  • Salt and Pepper
  1. Bring broth to boil. Add beans with liquid, tomatoes, Italian seasoning and black pepper. Simmer. A couple minutes before serving, add a couple handfuls of spinach. Put a spot of pasta into bowls and, when spinach softens and turns bright green, ladle the soup over the pasta. Top with copious amounts of Parmesan, salt and pepper.
For some reason, I made this soup back in my pre-cooking days, adapted it over the years, and still absolutely love it. Other vegetables can be added if desired, but it's pretty great as is -Sarah
