Fennel Celery and Cabbage Salad

  • 1 fennel root trimmed and sliced
  • 1/2 celery sliced
  • 1/4 cabbage shredded
  • 1/2 bunch cilantro chopped
  • 1 lemon juice
  • dash of virgin olive oil as needed
  • salt to taste
  • butter lettuce for garnish
  • 1/2 red bell pepper sliced for garnish
DIRECTIONS
  1. Mix all ingredients.
  2. Garnish with lettuce and bell pepper.
RECIPE BACKSTORY
Fennel is a flowering plant species in the carrot family. It is a hardy, perennial herb with yellow flowers and feathery leaves.
