Festive Eggnog Cake

  • For the Cake:
  • 2 cups flour
  • 1-1/2 cups sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup eggnog
  • 1/2 cup butter, softened
  • For the Frosting:
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 1 cup eggnog
  • 2/3 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
DIRECTIONS
  1. For the cake: In a large mixing bowl combine all of the ingredients. Blend well with an
  2. electric mixer on low. Grease and flour the bottoms of 2 (9-inch pans); pour batter into
  3. pans.
  4. Bake at 350-degrees for 25 to 30 minutes or until cake springs back when lightly touched in center. Cool. Fill and frost with Eggnog Frosting.
  5. Makes 1 (9-inch) layer cake.
  6. For the Frosting: In a small saucepan, combine flour, salt, and eggnog. Cook over low heat, stirring constantly, until very thick. Cool.
  7. Gradually cream butter and sugar. Add flour mixture; beat until light and fluffy. Blend in vanilla. Fill and frost cooled cake
