Feta, Tomato and Red Onion Salad
  • 5 ounces feta cheese, crumbled (1 1/4 cups)
  • 4 large ripe tomatoes cut into 1/2-inch pieces
  • 1 medium red onion, finely chopped
  • 1 large jalapeño, seeded and thinly sliced
  • 2 tablespoons minced flat-leaf parsley
  • 3 tablespoons extra-virgin olive oil
  • Salt
  1. In a large bowl, gently toss the feta cheese with the tomatoes, onion, jalapeño and minced parsley. Drizzle the olive oil over the salad, season with salt and toss until coated. Serve the salad at room temperature.
