Fettuccine Alla Romana

  • Cooking Time: 25 minutes

  • 1/2 pound Fettuccine
  • 2 eggs
  • 3 cloves of garlic, minced
  • 2 pounds ricotta cheese
  • 1/2 stick butter
  • 1/2 cup parmesan cheese
  • chopped fresh parsley, 1/2 cup or to taste
  • salt and pepper, to taste
DIRECTIONS
  1. Cook fettuccine, drain
  2. Saute garlic in butter
  3. In large pan mix ricotta, parmesan, parsley, eggs, salt and pepper
  4. Pour garlic/butter into cheese mixture
  5. Add pasta
  6. Cook slowly over low flame for 10 minutes
RECIPE BACKSTORY
This is one of my mom's standby pasta dishes. It is a "dry" pasta dish, not saucey like Fettuccine Alfredo is, but just as rich.
