Fettucine Cacciatore
  • 8 ounces fettucine, uncooked
  • 2 tsp vegetable oil
  • 1 lb boneless skinless chicken breasts-chopped
  • 1 cup each sliced green peppers and sliced
  • mushrooms
  • 1 can (141/2 oz)diced tomatoes, undrained
  • 1/4 cup kraft zesty italian dressing
  • 1/2 cup kraft shredded Italian mozzarella
  • 1/2 cup chopped fresh basil leaves
  1. Cook pasta as directed on package. Meanwhile, heat oil in large skillet on medium high heat.
  2. Add chicken - cook and stir until no longer pink.
  3. Add peppers and mushrooms - cook 3 min stirring occasionally.
  4. Stir in tomatoes with their liquid and the dressing. Reduce heat to medium low - simmer 5 minutes or until chicken is cooked through.
  5. Toss pasta with chicken mixture and sprinkle with cheese and basil.
  6. Makes 4 servings - 2 cups each
  7. I cook my chicken until its cooked the way I like it and then I add the other ingredients and cook for about 15-20 minutes and add the pasta last.
