Flan with a plan
  • Cooking Time: 20 to 25
  • 1 Qt. half and half (scald)
  • 7 Whole large eggs
  • 1/2 cup sugar
  • pinch of salt
  1. Preheat oven to 350 degrees
  2. Beat well eggs, sugar and salt well and add scalded cream
  3. Pour into caramel lined baking dish.
  4. Set dish into hot water and slightly larger pan as high as possible.
  5. Bake for 20-25 minutes depending on depth of dish.
  6. When inserted knife comes out gookie, remove from oven and from hot water bath. if knife comes out clean, flan is overcooked!
  7. Caramel: in enamel or stainless steel (NOT ALUMINUM) small pan, put 1 cup sugar and 4 tablespoons water.
  8. Boil until caramelized.
  9. Watch carefully so it doesn't burn.
  10. Pour into dish. Let set.
