Florentine Simmered Rice

  • 1 3/4 cup chicken broth
  • 1 tsp dried Italian seasoning
  • 1 cup chopped spinach
  • 3/4 cup regular long-grain white rice
  • 1/2 cup grated Parmesan cheese
DIRECTIONS
  1. Heat broth and Italian seasoning in a saucepan over medium-high heat. Heat to a boil.
  2. Stir in spinach and rice. Reduce heat to low. Cover and cook 20 minutes or until rice is tender. Stir in cheese before serving. Serve with additional cheese, if desired.
