Fluffy White Frosting
  • 1/2 c sugar
  • 3 Tbsp water
  • 1/8 tsp cream tartar
  • teeny bit of salt
  • 1 egg white
  • 1/2 tsp vanilla
  1. In saucepan combine sugar, water, cream tartar and salt. Cook and stir until it is bubbly and sugar is dissolved.
  2. In icy cold mixing bowl, combine egg white and vanilla (don't turn on mixer yet). Now add the sugar mixture slowly to the unbeaten egg white as you turn your mixer on gradually making it up to high speed. Mix until stiff peaks form. This make take several minutes. Cake can be frosted creatively with this stiff peak frosting.
