Fool-Proof Quiche
  • 1 baked deep dish pie crust
  • 3 large eggs, beaten
  • 1 1/2 cups whole milk (or 1 cup half-and-half plus 1⁄2 cup milk)
  • 1 cup cooked, chopped meat (ham, bacon, sausage, chicken, crab, shrimp even)
  • 1 1/2 cups shredded cheese (your choice-I like the combo. of monterey jack and cheddar-swiss would be really good)
  • 1 tblsp. flour
  • salt and pepper to taste
  1. Mix eggs and milk; add meat and cheese (coat the cheese with the flour), then salt and pepper. Mix well, and pour in baked pie crust. Bake at 350 degrees for an hour, maybe a little longer. Center should be set, and knife inserted in the middle should come out clean.
