Forest Casserole
INGREDIENTS
- Some chicken cut into cubes, like two breasts or so
- 1 cup of rice--half wild rice and half regular white rice
- 1 2/3 c. evaporated milk
- 1/2 c. chicken broth
- 1/4 c. butter
- 1/4 c. flour
- Mushrooms (about 4, sliced)
- 1/4 of an onion, chopped small
- Chopped pecans
- Dried cranberries
- Two big pinches of rosemary
- Salt and pepper to taste
DIRECTIONS
- Cooking directions!
- Boil the chicken cubes and cook the rice while you sautee the mushrooms and onions together.
- Then cook the butter and flour together into a paste (or a roux, but that might not be spelled right).
- Add the liquid bits to the roux to make the saucey stuff that sticks the casserole together. Stir in
- the rice, mushrooms and onions, pecans, cranberries and chicken. Add the rosemary, salt and
- pepper. Bake that shit at 350 for about half an hour (uncovered). EAT!
