Foul Akhdar [Moroccan style horse beans]

  • 500 grams/1 lbs shelled horse beans
  • 6 large ripe tomatoes peeled, seeded and chopped
  • 2 cloves of garlic, finely chopped or pressed
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • a quarter teaspoon of black pepper
  • 1 and a half teaspoon of paprika powder
  • one eight of a teaspoon of ground hot pepper
  • 100 ml of olive oil
  • a quarter cup of chopped cilantro
  1. 1 Cook the beans in plenty of salted water, partially covered over medium-high heat until tender and can be popped out of their skins, drain and set aside.
  2. 2 While the beans are cooking, put all the other ingredients in a skillet and mix well, cook uncovered over medium-high heat, stirring ocassionally and mashing the tomatoes as they soften until a thick sauce has formed [ca. 25 minutes]
  3. 3 Add the cooked beans and two tablespoons of water to the sauce and simmer for a few minutes to heat the beans
  4. 4 Serve warm with fresh bread
