French Breakfast Muffins

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • 1 tsp cinnamon
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Grease 15 medium muffin cups.
  3. Mix thoroughly shortening, sugar, and egg.
  4. Combine flour, baking powder, salt and nutmeg in a small bowl.
  5. Add the flour mixture to the shortening mixture alternately with milk.
  6. Fill muffin cups 2/3 full.
  7. Bake 20 - 25 minutes.
  8. Mix sugar and cinnamon. Immediately after baking, roll hot muffins in melted butter, then in cinnamon and sugar mixture.
  9. Note: Can be made in mini-muffin tin - decrease baking time a bit. Also, you can 'butter' the hot muffins using a pastry brush instead of rolling them in the butter.
