French Green Beans Bundles
INGREDIENTS
  • 5 eggs - separate whites and yolks
  • 1/2 cup buckwheat flour
  • 1 1/2 pound cooked french green beans and cooled
  • olive oil as needed
  • tomato sauce *see recipe
  • salt to taste
  • garnish with fresh parmesan
DIRECTIONS
  1. In bowl beat egg whites until stiff.
  2. Stir the remaining yolks and slowly fold them to the egg whites.
  3. On a chopping board sprinkle it with flour and make green bean bundles and sprinkle each bundle with the remaining flour.
  4. Grab one bundle and dip it in the batter to coat well and fry in the heated oil.
  5. Continue until you finish all bundles.
  6. Add hot tomato sauce to each bundle.
  7. Add salt as needed.
  8. You may garnish with fresh parmesan.
